Banana Nut Bread
OK, this really isn’t a chocolate recipe, although I have seen banana nut bread recipes with chocolate chips and maraschino cherries in them. If you want to add chocolate chips, I’d add 1/2 to 1 cups of the semi-sweet chocolate chips, and 1/2 cup of the maraschino cherries.
This is more of a tip than a recipe. For making really tasty banana nut bread quickly, keep a couple of the Jiffy brand banana nut bread mixes in your pantry. Any time you’ve got a banana or two that has just gotten too ripe for you to eat, mash it up and add it to two boxes of the Jiffy brand banana nut bread mix. Make the mix according to the package directions, then after you’ve got it all mixed up, stir in your mashed banana (and chocolate chips and cherries if you wish).
You can bake this either in a regular loaf pan or in 9×13 inch pan, just which ever you feel like having.
I make this for my dear hubby and it always takes some to work and it gets rave reviews. Gives me a bit of a giggle, it’s so easy to make!

Scrumptious Chocolate Layer Bars
I was going through my recipe box yesterday and came across an email from my sister that I had printed out over 10 years ago! In the email, she gives me a recipes for these “Scrumptious Chocolate Layer Bars”. I’m sure I put it in my recipe box because I wanted to make it…I love cream cheese and anything with cream cheese in it…I’m there! So, I haven’t made this recipe yet myself, but I know it’s good because my sister is an excellent cook and has always come up with new dessert recipes that are just out of this world…try this one, I’m sure you’ll love it. Looks easy too. When I get around to making it, I’ll upload a picture.
Recipe for Scrumptious Chocolate Layer Bars:
Mix and stir constantly over low to medium heat until all melts and is smooth:
- 2 cups chocolate chips
- 1-8 oz. package cream cheese
- 1-5 oz. can evaporated milk
Stir in 1/2 teaspoon almond extract. (I’m going to use vanilla extract, I’m not big on almonds).
Set aside.
In a large mixing bowl mix:
- 3 cups flour
- 1-1/2 cups sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup salted butter
- 2 large eggs, beaten
- 1/2 teaspoon almond extract (again, I’ll use vanilla extract here)
Mix just till it starts to be crumbly. Place 1/2 of the flour mixture in a greased 9×13 pan and press gently to form bottom layer. Add chocolate mixture, spreading evenly. Sprinkle the rest of the mixture on top. Make sure it is crumbly for the top.
Bake at 350 for 35-40 minutes just till it is golden brown.

Easter Puff Bunnies Recipe
Here’s a recipe suggestion for a recipe for Easter. These too-cute Easter Puff Bunnies actually are easy to make. They feature marshmallow tails and ears made of almonds, each attached to a chocolate snack cookie topped with marshmallow and coated with sweet white icing. Best, Leigh Anne
Easter Puff Bunnies
16 whole natural almonds
10 jumbo marshmallows
1 cup powdered sugar
3 tablespoons whipping cream
One 9-ounce package Little Debbie Marshmallow Easter Puffs, available at grocery and superstores nationwide
1 to 2 drops blue food coloring
1 drop black food coloring
1. Square off round ends of almonds; set aside.
2. Cut 2 marshmallows in half; crosswise; cut each half in half again to form 8 semicircle-shaped pieces.
3. Place powdered sugar in bowl: stir in whipping cream, stirring with a whisk until smooth. Lay the Easter Puff with its flat end facing down. The Easter Puff will be the bunny’s middle section. Decide what rounded edge on that middle section will be the head of the bunny, which is where its whole marshmallow will be attached.
Use sugar mixture to stick or adhere 1 whole marshmallow on that edge of each Easter Puff, pressing gently into place. Use sugar mixture to stick 1 marshmallow quarter to the other side of each Easter Puff to form the tail.
4. Use sugar mixture to adhere 2 almonds on top of each whole marshmallow head to form 2 ears on each bunny. Let stand 30 minutes or until set. 5. Remove 2 to 3 tablespoons remaining frosting mixture from bowl; add 1 to 2 drops blue food color. Stir until well combined. Scrape blue frosting mixture into a small zip-top bag with a plastic spatula, pressing frosting to one corner of bag. Make a tiny snip in corner of bag with a pair of kitchen scissors. Place 2 small blue dots on the front of each marshmallow bunny head to form 2 eyes on each.
6. Stir 1 drop black food color in remaining frosting mixture, stirring until well combined. (If frosting is too thin, stir in another 1 to 2 tablespoons powdered sugar until frosting reaches desired consistency.) Scrape black frosting mixture into a small zip-top bag with a plastic spatula, pressing frosting to one corner of bag. Make a tiny snip in corner of bag with a pair of kitchen scissors. Place a small triangle in the center of each marshmallow head, just below blue eyes to form a nose on each bunny. Draw a mouth and whiskers on each bunny.
Allow bunnies to stand until frosting is set. Makes 8 bunnies.
