Peanut Butter w/Hershey’s Kisses - Boyfriend Cookies Recipe

Here’s a yummy version of Peanut Butter cookies, with a Hershey’s Kiss right in the middle to satisfy all the chocolate lovers!  Great chocolate recipe to make for a gift, or for yourself.  I call them Boyfriend Cookies because they’d be perfect to snack on while browsing Meg’s Boyfriend of the Week web site.

Cream margarine and peanut butter.  Add white and brown sugars, cream thoroughly.  Add egg, milk and vanilla; beat well.  Add flour and baking soda.  Roll dough in balls, then roll in white sugar.  Place on cookie sheet and bake for 8 minutes.  Remove from oven and place unwrapped Hershey’s Kiss in the center of each cookie and press down.  Bake for another 5 minutes or until cookie is golden.  Remove from oven and cool on cooling rack.  Easily doubled (if dough is sticky, add flour - usually 2-4 T).

Make a Quick Batch of Chocolate Chip Cookies - Recipe

If you want a quick chocolate chip cookie fix, here’s a chocolate recipe for some chocolate chip cookies that you can make in an hour or less.  This recipe makes about 3 dozen, depending on how large you make your cookies.  The best thing about making chocolate chip cookies yourself is that you can have them hot out of the oven, and you know what’s in them, no weird sounding ingredients on a label!  Chocolate Chip Cookies are my absolute favorite, but the store-bought ones just taste nasty to me.  3 dozen is a nice size batch to make for just a couple of people and you have enough to have some cookies every day for a few days.

The salt in this cookie recipe is optional:  if you use salted butter, you can leave out the salt, unless you like salty cookies. I always use unsalted butter, but I still leave out the salt because we’re trying to cut down on the sodium in our diet, and the cookies still taste really good.  Here’s the recipe:

Preheat your oven to 375.  While oven is heating, mix butter with sugars until creamy.  Add in egg and vanilla and beat in until well mixed.  Add in 1/2 cup of the flour with your baking soda and salt, mix well.  Add in the remaining (3/4 cup) flour just until mixed.  Pour in chocolate chips and mix until chocolate chips are well distributed in the dough.

 Drop by small spoonfuls onto ungreased cookie sheet.  Bake at 375 for 10-12 minutes.  Don’t over bake!

Makes about 36 cookies.

Banana Nut Bread

banananutbread2.jpgOK, this really isn’t a chocolate recipe, although I have seen banana nut bread recipes with chocolate chips and maraschino cherries in them.  If you want to add chocolate chips, I’d add 1/2 to 1 cups of the semi-sweet chocolate chips, and 1/2 cup of the maraschino cherries.

 This is more of a tip than a recipe.  For making really tasty banana nut bread quickly, keep a couple of the Jiffy brand banana nut bread mixes in your pantry.  Any time you’ve got a banana or two that has just gotten too ripe for you to eat, mash it up and add it to two boxes of the Jiffy brand banana nut bread mix.  Make the mix according to the package directions, then after you’ve got it all mixed up, stir in your mashed banana (and chocolate chips and cherries if you wish).

You can bake this either in a regular loaf pan or in 9×13 inch pan, just which ever you feel like having. 

I make this for my dear hubby and it always takes some to work and it gets rave reviews.  Gives me a bit of a giggle, it’s so easy to make!
