Chocolate Chip Muffins
These chocolate chip muffins are easy to make and taste like big soft chocolate chip cookies!
Ingredients
- 1 egg
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1-1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped walnuts or pecans (optional)
Beat egg, add sugar, stir in milk, oil and vanilla. Mix in flour, baking soda and salt, just until moistened. Batter should be lumpy. Stir in chocolate chips and nuts if desired. Fill muffin cups 2/3 full. Grease muffin pan cups if not using paper cups. Bake in 400 degree oven for 20 to 25 minutes or until golden brown. Cool for ten minutes then remove from pan.
Makes 12 cupcake sized muffins…delicious!

Easy Black Bottom Cupcakes
- 8 oz package cream cheese
- 1 egg
- 1/3 cup sugar
- 1/8 teaspoon salt
- 6 oz. semi-sweet chocolate chips
- 1 package devil’s food cake mix
Combine cream cheese, egg, sugar and salt. Mix until well blended. Stir in chocolate chips and set aside. Prepare cake mix according to package instructions. Fill cupcake paper lines 1/3 full with cake batter. Top with heaping teaspoon of cream cheese mixture. Sprinkle with additional sugar. Bake for 30-35 minutes. Makes 24 cupcakes.

Heat butter and sugar on low in saucepan until it comes to a boil. Add chocolate chips, stir until melted. Remove from heat. Stir in oatmeal. Drop by spoonfuls onto waxed paper.
