Chocolate Cheesecake
Crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
Filling:
- 4-8 oz. packages cream cheese, softened
- 1/4 cup sugar
- 4 eggs
- 12 oz. semi-sweet chocolate, melted
- 1/2 cup strong coffee
- 1 teaspoon vanilla extract
- 2 tablespoons dark rum
- 1/2 cup heavy whipping cream
Preheat oven to 350F.
Grease bottoms and sides of a 10 inch springform pan.
Prepare crust by combining graham cracker crumbs, sugar and melted butter in a bowl, mix well with a fork. Press crumb mixture into bottom and half-way up the sides of pan. Bake for 8 minutes, cool on wire rack.
Beat cream cheese until light and fluffy . Add sugar and eggs, one at a time, beating well after each egg addition.
Add melted chocolate, coffee, vanilla, rum and cream; blend well. Pour into graham cracker crust.
Bake for 1 hour. Turn off heat and let cheesecake sit in oven one hour more. Cool on wire rack. Refrigerate for 3 to 4 hours before serving.

Chocolate Chip Cheesecake
- 2-3 oz. packages cream cheese, softened
- 1-14 oz. can condensed milk
- 1 egg
- 1 teaspoon vanilla
- 1 cup mini chocolate chips
- 1 teaspoon flour
- 1 chocolate crumb pie crust
- Chocolate Glaze
- Chocolate Curls (0ptional)*
Preheat oven to 350F. In medium bowl, with mixer, beat cream cheese until fluffy. Gradually blend in condensed milk until smooth. Add egg and vanilla, mix well.
Toss chocolate chips with flour, stir into cheese mixture. Pour into crust.
Bake 35 minute or until center springs back when lightly touched. Cool and top with Chocolate Glaze and chocolate curls. Serve chilled. Store in refrigerator.

Chocolate Glaze
In a small saucepan over low heat, melt 1/2 cup chocolate chips with 1/4 cup whipped cream. Cook and stir until thickened and smooth. Immediately spread over top of cheesecake.

Cheesecake with Chocolate Crust
This recipe makes enough to heap a 10 inch pie plate. Before making be sure to gird yourself with your strongest willpower or you’ll snitch at least a whole slice worth before it even hits the pie pan. This is a must for any company that you want to impress.
Crust:
- 1-1/2 cups chocolate cookies without the filling (like Oreos), crushed
- 1/2 cup chopped walnuts
- 1/2 cup melted butter or margarine
Mix well and press into 10 inch pie pan. Bake 7 minutes at 350F. Cool.
Filling:
- 16 oz. softened cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1 pint whipping cream
Whip together cream cheese, sugar and vanilla. Whip cream separately then fold into cream cheese mixture. Pour into crust and chill. (simple, isn’t it?).
Drizzle chocolate ice cream topping over the top and decorate with chocolate curls, if desired.
