Quick & Easy Fudgey Brownies
- 4 bars (4 oz.) unsweetened baking chocolate, broken into pieces
- 3/4 cup (1-1/2 sticks) butter or margarine
- 2 cups sugar
- 3 eggs
- 1-1/2 teaspoons vanilla extract
- 1 cup all purpose flour
- 1 cups chopped nuts (optional)
Heat oven to 350F. Grease 13″x9″ pan.
In large microwave-safe bowl, place chocolate and butter. Microwave at high for 1 and 1/2 to 2 minutes or until chocolate is melted and mixture is smooth when stirred. Add sugar, stir with spoon until well blended. Add eggs and vanilla, mix well. Add flour and nuts if desired, stir until well blended. Spread into prepared pan. Bake 30 to 35 minutes or until wooden pick inserted in center comes out almost clean. Cool in pan on wire rack. Cut into squares. Makes about 24 brownies.
May also be frosted with chocolate frosting.

Chocolate Caramel Brownies
- 1 package (18.25 to 18.5 ounces) devil’s food or chocolate cake mix
- 1 cup chopped nuts
- 1 egg, beaten
- 1/2 cup butter or margarine, melted
- 1 cup undiluted evaporated milk, divided
- 35 (about 10 oz.) light caramels, unwrapped
- 1 cup (6 oz.) semi-sweet chocolate chips
In large bowl, combine cake mix and nuts, stir in butter, egg and 2/3 cup evaporated milk. Batter will be thick. Spread half of batter into greased 13″ x 9″ greased pan. Bake at 350F for 15 minutes.
In small saucepan, combine caramels and remaining 1/3 cup evaporated milk. Stir over low heat until caramels are melted. Sprinkle chocolate chips over baked layer, drizzle caramel mixture over top. Drop remaining batter by heaping teaspoonfuls over caramel mixture. Bake at 350F for 20 to 25 minutes.

Easy Chocolate Chip Brownies
- 12 oz. semi-sweet chocolate chips, divided
- 1/2 cup butter or margarine
- 1-1/4 cup all purpose flour
- 1 cup granulated sugar
- 1/4 teaspoon baking soda
- 3 eggs
- 1 teaspoon vanilla
- 1/2 cup chopped nuts (optional)
In large saucepan over low heat, melt 1 cup chocolate chips and butter, stirring constantly until chocolate chips are melted. Remove from heat. Let cool slightly. Add flour, sugar, baking soda, eggs and vanilla. Stir with wooden spoon until blended, then stir vigorously 25 times. Add 1/2 cup chocolate chips and nuts. Spread batter in 13″x9″ greased pan. Sprinkle with remaining chocolate chips. Bake at 350F for 25-30 minutes, just until set.
