Candy Cooking Tip

When cooking candy, do not scrape the sides of the pan as you are stirring the candy.  That tends to add  a grainy texture to the candy.

Cherry Chocolates

This is a fun activity for a party. Use your imagination and you can dip all kinds of nuts, caramels, candied fruit pieces, pretzels, etc.

Drain cherries until very dry. Sift sugar into a large bowl, add butter and milk. Mix well - knead with hands if necessary. Pat candy around cherries covering completely. Let sit and dry slightly so there is a thin dry outer coating. melt chocolate chips in double boiler and shave paraggin into chocolate and mix. Stick a toothpick into cherry center and dip in chocolate. Set on wax paper or in candy cups. Tough up tops with chocolate swirl.

English Toffee

Combine all ingredients except chocolate chips in pan with large cooking surface. A teflon fry pan or any fry pan is good. Cook at high heat, stirring contstantly until mixture turns light brown. Pour onto greased platters, I use a large cookie sheet. While still hot, cover with chocolate chips and spread over candy. Cool completely before breaking into pieces. This candy does not “keep” well…everyone keeps eating it! LOL
