Banana Nut Bread
OK, this really isn’t a chocolate recipe, although I have seen banana nut bread recipes with chocolate chips and maraschino cherries in them. If you want to add chocolate chips, I’d add 1/2 to 1 cups of the semi-sweet chocolate chips, and 1/2 cup of the maraschino cherries.
This is more of a tip than a recipe. For making really tasty banana nut bread quickly, keep a couple of the Jiffy brand banana nut bread mixes in your pantry. Any time you’ve got a banana or two that has just gotten too ripe for you to eat, mash it up and add it to two boxes of the Jiffy brand banana nut bread mix. Make the mix according to the package directions, then after you’ve got it all mixed up, stir in your mashed banana (and chocolate chips and cherries if you wish).
You can bake this either in a regular loaf pan or in 9×13 inch pan, just which ever you feel like having.
I make this for my dear hubby and it always takes some to work and it gets rave reviews. Gives me a bit of a giggle, it’s so easy to make!

Scrumptious Chocolate Layer Bars
I was going through my recipe box yesterday and came across an email from my sister that I had printed out over 10 years ago! In the email, she gives me a recipes for these “Scrumptious Chocolate Layer Bars”. I’m sure I put it in my recipe box because I wanted to make it…I love cream cheese and anything with cream cheese in it…I’m there! So, I haven’t made this recipe yet myself, but I know it’s good because my sister is an excellent cook and has always come up with new dessert recipes that are just out of this world…try this one, I’m sure you’ll love it. Looks easy too. When I get around to making it, I’ll upload a picture.
Recipe for Scrumptious Chocolate Layer Bars:
Mix and stir constantly over low to medium heat until all melts and is smooth:
- 2 cups chocolate chips
- 1-8 oz. package cream cheese
- 1-5 oz. can evaporated milk
Stir in 1/2 teaspoon almond extract. (I’m going to use vanilla extract, I’m not big on almonds).
Set aside.
In a large mixing bowl mix:
- 3 cups flour
- 1-1/2 cups sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup salted butter
- 2 large eggs, beaten
- 1/2 teaspoon almond extract (again, I’ll use vanilla extract here)
Mix just till it starts to be crumbly. Place 1/2 of the flour mixture in a greased 9×13 pan and press gently to form bottom layer. Add chocolate mixture, spreading evenly. Sprinkle the rest of the mixture on top. Make sure it is crumbly for the top.
Bake at 350 for 35-40 minutes just till it is golden brown.
