How To Make Chocolate Curls or Shavings for Garnish

Take a block of good quality chocolate.  Using a vegetable or potato peeler, hold the chocolate with some saran wrap or tin foil (so your fingers won’t melt it) and run the peeler over the narrowest side of the chocolate.  The chocolate will curl up like curls or wood shavings.  Store the chocolate shavings in a covered container in the refrigerator until needed.
