MTC Black Bottom Cupcakes
Dry Mix:
- 3 cups flour
- 3 cups sugar
- 1/2 cup cocoa
- 1 teaspoon salt
- 2 teaspoons soda
Liquid Mix:
- 2 cups warm water
- 2/3 cup oil
- 2 teaspoons vinegar
- 2 teaspoons vanilla
Filling:
- 1-8 oz. package cream cheese
- 1/2 cup sugar
- 6 oz. chocolate chips
- 1 egg
- pinch of salt
Mix together well.Add liquid to dry mixture. Blend well, until there are no lumps. Fill cupcake pans 1/2 full. Drop filling on top, about 1-2 teaspoons each.
Bake at 350F for 15 minutes. Remove from oven, cool and top with icing:
Icing:
- 1 lb. powdered sugar
- 1/3 cup boiling water
- 1/3 cup softened margarine or butter
- 1/2 cup cocoa
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Combine sugar, cocoa and salt. Add water and margarine or butter. Blend. Add vanilla. Frost cupcakes.

Chocolate Chip Cookie Bars
This recipe can also be used to make regular drop chocolate chip cookies, but I usually take the easy (and faster!) way.
Blend together:
- 2 sticks butter or margarine, softened
- 1/2 cup sugar
- 1 cup brown sugar, packed
Add in:
- 2 eggs
- 1 tablespoon vanilla
Sift or stir together and add in a little at a time:
- 2-1/2 cups white flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Stir in:
- 6-12 oz. chocolate chips
- 1/2-1 cup chopped walnuts or pecans (optional)
Spread in 9″x13″ pan. Bake at 325F for 25-30 minutes or until done.

Candy Cooking Tip
When cooking candy, do not scrape the sides of the pan as you are stirring the candy. That tends to add a grainy texture to the candy.
